Sautéed Red Cabbage

1/2 red cabbage, cored and finely sliced
1 head garlic, finely chopped
4 slices bacon, cut into 1-inch pieces (optional)
2 tablespoons apple cider vinegar
salt
Freshly ground black pepper
3-4 spring onions or parsley, finely chopped
Method:
Cook the garlic in a large heavy skillet over moderate heat, stirring occasionally, until soft, about 5 minutes. If choosing to use bacon, then add it to the pan and cook for another 5-10 min.
Add the cabbage to the hot skillet and cook, stirring occasionally, until crisp-tender, 6 to 8 minutes. Add the vinegar and cook until liquid has evaporated. Remove from the heat and season with salt and pepper.
Transfer the cabbage to a serving dish and sprinkle garnish with the spring onions/parsley and serve.
